SPICY SHRIMP & CHORIZO AMATRICIANA

INGREDIENTS
  • 2 TBSP OLIVE OIL
  • 2 TBSP BUTTER
  • 8 TBSP CHOPPED  AGUILA CHORIZO
  • 8 TBSP SHRIMP
  • 1 TBSP CHOPPED GARLIC
  • 2 CUPS TOMATO SAUCE
  • 1 CUP CHICKEN STOCK
  • 1 TSP SUGAR
  • 1 TSP DRIED CHILI FLAKES
  • 1 TSP DRIED OREGANO
  • 1 TSP DRIED BASIL
  • 400g COOKED PENNE NOODLES
COOKING DIRECTIONS
  1. Saute Chorizo in Olive and Butter until brown
  2. Add Garlic and Shrimp, saute for 30 sec, do not brown
  3. Add Tomato Sauce, Stock, Sugar, Chili Flakes, Oregano, and Basil.  Simmer for 5min
  4. Add or top Pasta with Sauce. Garnish with Parmesan Cheese
